Cranberry Orange Spice Cookies

It’s a wonderfully rainy day up in the Redwoods, perfect for tea, cookies and snuggling.  Today I have my heart set on making the best Gluten Free spicy, “pick me up in a warm blanket of goodness” cookies ever!  Of course, I have only made GF cookies a few times before but I am completely confident, at least I’m courageous enough to try!

Years ago, when I first gave up sugar and white foods, flours, milk, sugar, etc, I started making healthy, happy baked goods. Winters in Michigan are made for baking and I delighted in making amazing and healthy goodies for students and friends.  Since I’ve been GF (Gluten Free) for the past year, I have to admit, I’ve been a little intimidated by the chemical complexity required in creating GF cookies.  There are so many BAD GF cookies out there, I mean, really.  Bad cookies are depressing, so I have renewed my commitment to creating amazing GLUTEN FREE COOKIES to warm your heart and blow your mind!  I’m ambitious, I know.  I’m a Capricorn:)

Here is today’s experiment.  Patrick says they are ,”the BEST gluten free cookie ever!”  Enjoy!

Cranberry Orange Spice Cookies

Ingredients:

1 cup coconut oil
1 cup coconut milk
2 t vanilla extract
½ cup molasses
1 ½ cup raw sugar
2 t orange zest

  • Cream together these ingredients & set aside.

2 cups brown rice flour
2 cups sweet rice flour
1 tsp. xantham gum
½ tsp. baking soda
1 tsp. baking powder
1 tsp. each of powedered cinnamon, ginger, Ancho chili
½ tsp. sea salt

  • mix together well breaking up any lumps.
  • add 1 ½ cups Certified Organic Gluten Free Oats & 1 cup dried organic cranberries
  • optional additions for extra yum: walnuts pieces or pumpkin seeds, ½ cup.

Mix together the wet & dry ingredients & refrigerate while the oven heats to 350.

Roll spoonfuls of dough into balls & place on cookie sheets 1-2 in. apart.  Bake for 15-17 min.

Serve with orange zest sprinkled over top & hot tea for a sweet moment of heaven.
